    مقال قيم جداً يصحح الكثير من المفاهيم الخاطئة حول الأجبان وحساسية اللاكتوز. من الرائع معرفة أن عملية التعتيق (Aging) الطبيعية هي الحل السحري لتقليل نسبة السكر في الأجبان مثل ‘البارميزان’ و’الشيدر’. النصيحة المتعلقة بالابتعاد عن الأجبان ‘المقلدة’ أو الرخيصة مهمة جداً، لأن الجودة هي الضمان الوحيد لصحة الجهاز الهضمي. شكراً لمجلة ماويب على هذا الدليل الغذائي المتميز.

    أحيانًا نكتشف أن الحل ليس في الحرمان، بل في حسن الاختيار… فحتى من يعاني من حساسية اللاكتوز يمكنه الاستمتاع ببعض الأجبان التي تقل فيها نسبته مع الوقت. الأمر ليس منعًا بقدر ما هو فهم لما يناسب الجسد، وحين نفهم ذلك نعيش توازنًا هادئًا بين اللذة والراحة.
