    في بساطة المائدة المغربية سرٌّ عميق؛ حين تبدأ بالسلطة قبل الطعام، كأنك تمنح جسدك لحظة استعداد هادئة، فتسير الهضم بسلاسة ويهدأ الجوع دون إفراط، وتستقبل النعم بتوازن وحكمة، وكأن هذا التقليد القديم يهمس لنا أن الصحة تبدأ من ترتيب صغير في العادات قبل أن تكون في كثرة الطعام

    أدركتُ أن طبق السلطة الذي يسبق وجبتنا ليس مجرد عادة عابرة، بل حكمة هادئة تُمهّد للجسد طريق الهضم وتُخفّف ثقل ما يأتي بعده؛ ففي بساطة الخضر تختبئ قدرة على ضبط الشهية وتوازن السكر ومنح الجسد خفة لا تُشترى.
