The Global Journey of Pistachios

Pistachios have a rich history that dates back thousands of years. Originating in the Middle East, these nuts have been a staple in various cuisines and cultures. They are known for their unique flavor, vibrant green color, and numerous health benefits.

Pistachios are packed with essential nutrients, including protein, fiber, healthy fats, vitamins, and minerals. They are also known to improve heart health, reduce inflammation, and even aid in weight management when consumed in moderation.

What are pistachios?

Pistachios are the edible seeds of the Pistacia Vera-tree, a plant that has been cultivated for thousands of years. Botanically speaking, the pistachio is a drupe, just like a peach or cherry. 

In culinary and nutritional contexts, the pistachio is often considered a nut because of the way we eat and process them, but technically it is not a true nut.

Originally from the Middle East, pistachios are now grown worldwide, particularly in countries such as Iran, the United States (California), Turkey, and Syria. The nuts are known for their bright green color and unique, slightly sweet flavor. They are often eaten raw, roasted, or salted, but are also a popular ingredient in sweet and savory dishes.

Cultivation and processing of pistachios

Pistachio trees thrive in dry, warm climates with cool winters. The trees can grow to 10 to 12 meters tall and take about 7 to 10 years to produce a significant harvest. 

The nuts grow in bunches on the trees and are covered in a hard shell. When the nuts are ripe, the shell splits open, indicating that they are ready to be harvested.

After harvesting, the pistachios are dried to extend their shelf life. They are then sorted by size and quality. 

Some nuts are roasted and salted, while others are left raw for a more natural flavor. Nowadays, shelled pistachios are also available, making them easier to use in dishes.

Pistachio Producers in the World

The United States, particularly California, is one of the largest producers of pistachios globally. However, countries like Iran, Turkey, and Syria also contribute significantly to the world’s pistachio supply. 

These nuts are versatile and can be incorporated into a variety of dishes, from sweet to savory, enhancing both flavor and texture.

This trend highlights the importance of pistachios in the Moroccan market and their potential for further growth.

Moroccan recipes featuring pistachios

Here are two delicious Moroccan recipes featuring pistachios:

1. Moroccan Roasted Carrots with Goat Cheese, Pistachios, and Golden Raisins

This dish offers a delightful blend of sweet, earthy, and slightly spicy flavors, making it a perfect side dish for any occasion.

Ingredients:

  • 1 lb carrots, peeled and cut into sticks
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • 1/4 cup crumbled goat cheese
  • 1/4 cup chopped pistachios
  • 1/4 cup golden raisins
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 200°C.
  2. In a bowl, toss the carrot sticks with olive oil, cumin, paprika, salt, and black pepper.
  3. Spread the carrots on a baking sheet lined with parchment paper.
  4. Roast for 20-25 minutes, or until the carrots are tender and slightly browned.
  5. Remove from the oven and drizzle with honey and lemon juice. Toss to coat.
  6. Transfer the carrots to a serving platter and top with crumbled goat cheese, chopped pistachios, and golden raisins.
  7. Garnish with fresh parsley and serve warm.

2. Pistachio and Orange Cake

This gluten-free and dairy-free cake is perfect for those with dietary restrictions and offers a delightful combination of pistachio and orange flavors.

Ingredients:

  • 1 cup ground almonds
  • 1 cup ground pistachios
  • Zest of 1 orange
  • 1/2 cup granulated sugar
  • 1/2 tsp salt
  • 1/2 cup olive oil
  • 3 large eggs
  • 1 tsp baking powder
  • 1/2 cup orange juice
  • 1 tbsp caster sugar (for syrup)

Instructions:

  1. Preheat your oven to 180°C. Grease a 23cm cake pan and line it with parchment paper.
  2. In a large bowl, combine the ground almonds, ground pistachios, orange zest, granulated sugar, and salt.
  3. In a separate bowl, whisk together the olive oil, eggs, and baking powder.
  4. Add the wet ingredients to the dry ingredients and mix until well combined.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, prepare the orange syrup by combining the orange juice and caster sugar in a small saucepan. Heat over medium heat until the sugar dissolves.
  8. Once the cake is out of the oven, brush the top with the orange syrup.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  10. Serve the cake garnished with additional chopped pistachios if desired.
